Healthy pizza

Quick and easy pizza, using wraps instead of a traditional pizza base...

My Italian bestie (who actually has a diploma in making pizzas) please close your eyes and skip to the next recipe. This is my go to for a quick and simple alternative to pizza...


You'll need...

  • Wraps (Dubai based people, my favourite are the wholegrain ones from spinneys (see picture below)

  • 1/2 cup of shredded chicken (or cut this for vegetarian option)

  • 100g mushrooms, thinly sliced

  • 1/4 small red onion, thinly sliced

  • 1/2 red or green capsicum, thinly sliced

  • 1/4 cup of grated mozzarella or cheddar cheese

  • Pizza sauce for base

  • Rocket for serving


Optional extra... adding a sauce on top after cooking such as BBQ, Peri Peri or Perinaise.





Instructions

  • Pre-heat oven to 180 degrees celsius.

  • Arrange wraps on oven proof tray, lined with foil if required.

  • Lightly cover wrap with pizza sauce, next layering vegetables. Layer chicken and cheese.

  • Bake in oven for 15-20 minutes. Pizza is ready when outside crust is golden brown.

  • After removing from oven, top with fresh rocket, salt and pepper and any additional sauce if desired.

  • Enjoy
