Breakfast wrap

Perfect for the weekend, this delicious dish contains all my favourites all in one wrap!


Makes 1 wrap

  • Wrap of choice

  • 2 eggs

  • 2 rashers of bacon (turkey bacon as alternative)

  • 1/4 avocado, sliced

  • 4 cherry tomatoes, quartered

  • Handful of rocket

  • Sprinkle of cheese

  • Preferred sauce... my favourite is BBQ for this one



  • Cook bacon on pan until crispy.

  • Set aside to cook eggs.


Below is the sure fire way to enjoy the most perfectly cooked, runny but not too runny eggs!

  • Heat your pan well! It should be heated all the way through so the egg starts to set as soon as its crack. Too low heat and it will spread too far around the pan.

  • Lightly oil your pan and crack the eggs in quickly after each other. You can add as many eggs as you need as long as its done quickly.

  • Add a tablespoon of water directly onto the pan and immediately cover with lid and lower the heat. This technique will create heat throughout the entire pan using steam, cooking your yolk at the same time as the pan itself cooks the whites.

  • For myself, once the yolk starts to change to a lighter colour, its perfect inside for me. This doesn't take long so keep an eye on it.

To soften wrap, microwave for 15 seconds right before wrapping... assemble and enjoy :)
